MUSSELS WITH GARLIC, LEMON & WHITE WINE


This is a go-to recipe for me, any time I find fresh mussels. Easy, quick and delicious.

Put one pound of live mussels in a big bowl of fresh water, just for about 5 minutes while you assemble the rest of the ingredients. You don't want the mussels to die, you just want them to spit out some of the sand and grit they might have. Clean and de-beard the mussels.

Put some olive oil and about a tablespoon of butter into the bottom of a big pot, on medium heat. Add about 6 cloves of minced garlic. Cook for about a minute or two, then add about a cup of white wine. Add some salt and the zest of one lemon, and the juice of that lemon. I also throw in a dash of crushed red pepper.

Add the mussels and cover, increase the heat to medium high, let them cook for about 5 minutes. Throw in a couple of tablespoons of fresh chopped Italian parsley.

Serve with a nice piece of garlic bread, and enjoy :)
